SCONES

8 oz self-raising flour
2 oz butter
1 oz sugar
Fruit e.g. raisins

Rub flour and butter together, until the mixture resembles breadcrumbs.
Add in sugar and mix with 1 egg and 5 tablespoons of buttermilk.

Bake in a very hot oven, top shelf, for about 15 – 20 mins at 180°C/355°F


GUINNESS FRUIT CAKE

1 cup of Guinness
1 cup of sugar
1 lb fruit
4 oz margarine
1 teaspoon baking soda
1 teaspoon mixed spice

Boil and cool the above ingredients.

Add 2 eggs and 10 oz flour when cool, bake in a moderate oven for 90 mins


SODA BREAD- WHITE

4 cups white flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 teaspoon sugar
1 teaspoon cream of tartar
1 ½ cups buttermilk

SODA BREAD- BROWN

2 cups of brown and 2 cups of white flourfor brown soda bread
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 teaspoon sugar
1 teaspoon cream of tartar
1 ½ cups buttermilk

Put all the dry ingredients into a mixing bowl and make a well in the centre. Add the buttermilk and mix into a soft dough.

Knead very briefly and lightly. (The aim is just to get rid of the largest cracks, as the dough will become tough if it is handled for too long).

Shape the loaf into a round about 18cm/7in in diameter and place on the baking sheet. Cut a deep cross on the top of the loaf and sprinkle with a little flour. Bake for about 25-30 minutes at 220 °C.
